Nice ride. My brother has been checking out the same bike as an upgrade from his Fuji hybrid.
I've been riding a cyclocross bike (Kona Jake the Snake) on the Ride too. I swapped out the 700x35 tires and put on some 700x23s for my road rides. Check with your bike shop too see how narrow a tire you rims will handle.
As for pedals, I've been using the basic Shimano m505 SPDs that came with my bike. Have you ridden clipless before?

I just got my first road bike this summer too!
made the switch to clipless pedals in october...
it took a bit of getting used to.
I suggest, if you're going the clipless route.. to
clip in with something to lean on first (I had a big freezer in my garage), then back-pedal and get used to clipping in and out.
when you can get in and out without looking down (and comfortably with both feet), take her outside, maybe in a park with a gravel path and grass on either side, just incase you forget to unclip and topple over. (word of advise, don't try and unclip both feet at the same time)
I got into the habit of wiggling my feet every time I stopped pedaling and prepared to slow down, that reminded me I was clipped in.
makes a huge difference! How are you liking the switch from mountain? I love how fast I can go, and how, with my new shoes, I'm powering up those hills that used to cause me trouble! :D

I have been using SPDs for a number of years, and swear by them.
A word of advice: On the pedal (SPDs for sure, probably other types too) there is a screw to adjust the release tension. Turn it right back for the easiest release. For road biking it won't lead to unintentional unclipping, because you release by twisting your foot sideways.
